1. This is far from the truth! There is a whole lot more that goes into catering for a successful event than just the supply of food. Much more time and effort goes on behind the scenes than meets the eye. Here is a list of some non-food related expenses incurred by the caterer for an event:
• Hiring of skilled staff
• Liquid refreshments complete with glassware, ice and qualified bar staff
• Supply of crockery and utensils for the tables which will require washing at the end of the day
• Serviettes and table linen, depending upon the customer’s instructions
• Tables and chairs are often requested, which incurs a rental fee & delivery charges
• Umbrellas or awnings for shade can also be on the list for a caterer to supply
• Décor for the tables or room/hall may be the responsibility of the caterer
2. The quality of the chicken is under scrutiny
At way too many events the unsuspecting guest is dished up a chicken meal that was taken from a freezer only minutes before. Sadly, this is something a lot of people would have experienced. This leaves a lasting and miserable memory of chewing through that tasteless, tough, rubbery chicken.

3. Setting up and preparation by a catering company takes less than one hour
If only! A guest sits at a table that is already set and ready for service. That is all they see and rightly so. For an enjoyable experience that pleases all the guests and the customer/s well in excess of one hour is required.
From the moment staff arrive they are busy setting about their allotted duties well before any guests arrive. The worksheet would go something like this:
• Unpack the catering truck of all supplies and equipment
• Set up tables and chairs with linen, cutlery, plates etc.
• The kitchen needs to be set up for ease of cooking and serving
• Any decorations and front of house requirements need to be completed
• Then the food preparation and cooking begins
